MEATBALLS:
1 pound ground beef (ground turkey or ground buffalo for low fat recipe)
1/2 cup crushed Ritz crackers (reduced fat ritz cracker for low fat recipe)
1/4 cup milk (fat free milk for low fat recipe)
1/2 teaspoon salt
1/4 teaspoon pepper
1 small onion, chopped (about 1/4 cup)
1 egg (1/4 cup egg beaters for low fat recipe)
SAUCE:
1 medium, chopped (about 1/2 cup)
1 clove garlic, crushed
1 cup fresh mushrooms sliced
1 tablespoon olive oil
1 teaspoon sugar
1 teaspoon dried oregano leaves
3/4 teaspoon salt
3/4 teaspoon dried basil leaves
1/2 teaspoon dried marjoram leaves
1 can (16 oz) crushed tomatoes (or 1 can tomato soup, no water added for a milder sauce)
1 can (8 oz) tomato sauce
4 cups hot cooked spaghetti noodles (use Barilla plus spaghetti for a healthier meal)
Meatballs: Mix all ingredients; shape into twenty 1-1/2 inch meatballs. Place in ungreased rectangular pan. Bake uncovered in 400F oven until done and light brown, 20 to 25 minutes.
While meatballs are baking make sauce: In a 3-quart sauce pan, saute onions, garlic and mushrooms in olive oil for 5 minutes or until onions become transparent. Add remaining ingredients, and heat to boiling; reduce heat. Cove and simmer, stirring occasionally, 20 minutes. Serve over spaghetti, with meatballs, and if desired, with grated parmesan cheese.
