•         1  pound Ham sliced
            2  pounds potatoes (about 6 medium)
            3  tablespoons olive oil
            4  tablespoons flour
        1/4  teaspoon pepper
    2-1/2  cups milk
            1  onion, finely chopped (about 1/2 cup)

    Wash potatoes and remove eyes.   Cut into thin slices.   Place potatoes in a saucepan covered with water, bring just to a boil, drain.
       Heat olive oil in saucepan over low heat until hot.  Stir in flour and pepper.  Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Slowly stir in milk.  Heat to boiling, stirring constantly.  Boil and stir 1 minute.
        In Slow cooker arrange ham and potatoes in 3 layers, topping the first 2 layers with half the onions and 1/3 the white sauce.  Top third layer with remaining sauce.
       Cook on high for 1 hour or until white sauce is bubbling, turn down to low for additional 3 hours.
    Yield: 6 servings.
