10 ounces egg noodles (No yolk egg noodles for low fat recipe)
1 can (10 3/4 oz) condensed cream-of-mushroom soup, undiluted. (98% fat free for low fat recipe)
1/2 cup milk (fat free milk for low fat recipe)
1 teaspoon instant minced onion
2 teaspoons prepared mustard
1 cup sour cream (fat free for low fat recipe)
1 pound cooked ham cut into 1/2 inch cubes (turkey ham for low fat recipe)
1/2 cup crushed Ritz crackers (reduced fat Ritz for low fat recipe)
1-1/2 tablespoons butter or margarine, melted (Olive oil for low fat recipe)
3 tablespoons Parmesan cheese (reduced fat for low fat recipe)
1. Preheat oven to 350F. Grease casserole dish.
2. In large kettle, bring water to boiling. Add noodles and return to boiling; boil 3 minutes. Drain and rinse with cold water.
3. Meanwhile, in small saucepan, combine soup and milk, stirring until smooth.
4. Add onion, mustard, and sour cream, stirring to combine well.
5. In prepared casserole, layer half the noodles, ham, and sauce. Repeat.
6. Toss Ritz crackers with butter; sprinkle over casserole. Top with cheese.
7. Bake, uncovered, 35 to 40 minutes, or until golden brown.
