• 2  tablespoons olive oil
    2  tablespoons flour
    1/4  teaspoon salt
    1/8  teaspoon pepper
    1  cup skim milk

    Heat oil in 1-1/2 quart saucepan over low heat.   Stir in flour, salt and pepper.  Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.  Stir in milk.  Heat to boiling, stirring constantly.  Boil and stir 1 minute.  Yield-1 cup sauce.
