            Pastry for 9-inch One-Crust Pie
        2  eggs
    3/4  cup sugar
        1  can (16 oz) pumpkin
        1  can (12 oz) evaporated milk
        1  teaspoon ground cinnamon
    1/2  teaspoon salt
    1/2  teaspoon ground ginger
    1/4  teaspoon ground cloves

    Heat oven to 425F.  Prepare pastry.  Beat eggs slightly with hand beater; beat in remaining ingredients.  Place pastry-lined pie plate on oven rack; our in filling.  Bake 15 minutes.
       Reduce oven temperature to 350F.  Bake until knife inserted in center comes out clean, about 45 minutes longer.  Refrigerate until chilled, at least 4 hours.  Serve with Whipped Cream if desired.
    Yield: 8 servings
