    GRAVY
        5  cans beef broth
        1  medium onion, chopped
        5  teaspoons cornstarch
        2  teaspoons flour
    1/4 cup water

    DUMPLING
        2  egg whites
        1  full egg
    1/2  teaspoon salt
    1/2  teaspoon pepper
    1/2  teaspoon coriander
    1/2  teaspoon sage
    1/2  teaspoon parsley
    1/2  teaspoon basil
        1  teaspoon baking powder

Mix above ingredients on high with electric mixer until foaming.

    3/4  pound liver
        1  small onion
1  pound potato pancake mix *
    1 1/2  cup water
Additional water or flour as needed

Grind together liver and onion, and add to egg and spice mixture.  Add potato pancake and water to mixture and let rest for 15 minutes.  (mixture will thicken while resting)
Add water or flour to make mixture the right consistency for dumplings.
Bring beef broth and onion to a boil in large soup kettle.
Using small spoon, dip spoon in boiling broth.  Drop spoonfuls of mixture in broth.  Make sure spoon is dipped in broth before the next dumpling is added.
In a small bowl mix cornstarch and flour with 1/4 cup water.
Once dumplings rise in broth, reduce heat, and simmer for 20 minutes.  Add cornstarch mixture to thicken.  Allow to simmer until gravy is thickened.

*The only place I know to get the potato pancake mix is at the following website.  When I find a substitution I will add it.   http://www.willowcreekmill.com/store/index.php?main_page=advanced_search_result&search_in_description=1&keyword=potato+pancake
