• 2-1/2  cups all-purpose baking mix
            1  can (12 oz) evaporated milk  (use fat free evaported milk for low fat recipe)
            1  cup granulated sugar
        1/3  cup olive or canola oil
            1  large egg

    1.  Preheat oven to 375F.  Grease or paper-line 18 muffin cups.
    2.  Combine baking mix, evaporated milk, sugar, oil, and egg in large mixing bowl.  Mix well.
    3.  Spoon batter into prepared muffin cups, filling 2/3 full.
    4.  Bake for 15 to 18 minutes, or until wooden pick inserted in center comes out clean.
    5.  Remove to wire racks to cool.
