• Spiced Salmon

    3 tablespoons brown sugar
    1/2 teaspoon garlic powder
    1/2 teaspoon ground mustard
    1/2 teaspoon paprika
    1/2 teaspoon pepper
    1/4 teaspoon dill weed
    Dash salt
    Dash dried tarragon
    Dash cayenne pepper
    4 tablespoons olive oil
    1 tablespoon soy sauce
    1 salmon fillet (2 pounds)

In a small bowl, combine the first nine ingredients. Add the oil and soy sauce; brush over top of salmon. Coat grill rack with nonstick cooking spray before starting the grill. Place salmon skin side down on rack. Grill, covered, over medium heat for 10-15 minutes or until fish flakes easily with a fork. Yield: 6-8 servings.

I made this in the oven. I covered a broiler pan with tin foil and broiled on low for about 20 min. I also added 1/2 tsp Turmeric to the sauce. What I like about this recipe is that you don’t have to marinade ahead of time, yet it tastes like you did.
