Layered potato, onion, and kielbasa slices are the highlights of this recipe.

    INGREDIENTS:
About 6 white potatoes with peels on
    2-3 white or yellow onions
    1 pound kielbasa
    1/2 stick (1/4 cup) margarine

    PREPARATION:
Slice the potatoes into disks, like thick potato chips. Put slices in the bottom of a 9×13 inch baking dish in a single layer, just barely overlapping edges.
Slice onions into rings and separate into rings.

Scatter half the slices over the potatoes.
Slice the kielbasa into “coins.” Place 1/2 of the kielbasa in a single layer over the onions.

Repeat potato, onion, and kielbasa layers.

Slice 1/2 stick of margarine into 6 pieces. Arrange pieces over top of the kielbasa.

Bake uncovered for 1 hour at 350 degrees.

Variation: Follow the recipe above, substituting yellow squash for the potato. Cover with aluminum foil before baking.
