This seasoned chicken is served on a bed of rice.
INGREDIENTS:
1 stick butter (1/2 cup)
1/4 cup of olive oil
1/4 cup green onions, chopped
1 tablespoon garlic, minced
2 pounds chicken breasts, boneless and skinless, cut into 1/2″ pieces
Juice of one lemon
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh parsley, minced
1 tomato, chopped
Cooked hot rice
PREPARATION:
In skillet, heat together margarine and olive oil and sauté onions and garlic. Add chicken, lemon juice, salt, pepper and parsley. Continue cooking, stirring constantly, for 5-8 minutes or until chicken is done. Add tomatoes and heat through. Serve over hot rice.
