Serve this classic chicken dish over rice or pasta.
INGREDIENTS:
1/4 cup oil
1 medium onion, chopped
1 large red or yellow pepper, sliced
2 or 3 cloves garlic, minced
1 cup sliced mushrooms
1 chicken, cut up (chicken breast for low fat recipe)
2 cans tomato sauce
1 can tomatoes
3 teaspoons Italian seasoning
salt and pepper
PREPARATION:
Cook onion, pepper, garlic and mushrooms in about half the oil until onions are transparent, then remove to a separate dish. Brown chicken pieces in remaining oil. Add tomatoes and tomato sauce. Add onions and peppers, then season. Bring to a boil. Cover and simmer for 40 minutes. Serve over pasta or rice.
